Geeze, it's hard to believe it has been almost a whole week since we last interacted! I have been greatly enjoying lots of snowy weather, days of lazing around on the couch, challenging runs, and a trip down to my brother's city in order to celebrate his big 21st!! (Time flies!)
This morning, I was craving french toast with a passion. After all, what better way to start out a morning than sweet, perfectly moist french toast? It's quick and easy to prepare, but will leave you satisfied and warm. Let's dig in.
This morning, I was craving french toast with a passion. After all, what better way to start out a morning than sweet, perfectly moist french toast? It's quick and easy to prepare, but will leave you satisfied and warm. Let's dig in.
Banana-Raisin French Toast
Serving Size: 2 Calories Per Serving: 315
Ingredients
- 4 slices low calorie cinnamon-rasin bread
- 1 large egg
- 3/4c. light vanilla soy milk
- 1/2tsp vanilla extract
- 1 large banana
- 4 tablespoons sugar-free maple syrup (optional)
Instructions
- Lay out the cinnamon-raisin bread. In a shallow dish, mix together the egg, milk, and vanilla.
- Heat a large skillet over medium-high heat.
- Take each piece of bread and dip it into the wet mixture, letting sit in the mixture for approximately 10 seconds (or until well-coated). Right after dipping, place in the heated skillet. Cook bread on each side for 1-2 minutes, or until sides brown and have a slight crunch.
- Place three slices of bread on each of two plates. Thinly slice the large banana, crosswise, and divide slices evenly among servings. Drizzle each with 2 tablespoons syrup, and enjoy!
